Kitchen Diaries & chimichuri
Hello, luckily i found some time to share a very precise recipe for a grill menu. Sadly here in Stockholm its complete ban on grill, due to extreme dryness and this is definitely wise. As daily my kids after listening news on bollibompa inform me about some new forest fire:(. So nowadays its better to keep ones grilling intentions inside the home. Recently i grilled my usual whole chicken tikka, but what made it special this time was Chimichuri.
Chimichuri a sauce with a catchy name and tangy flavor. First definitely attracted me because of its name, later ingredients caught my interest. I realized i am use to taste this herby mix since ages. I interpreted it like a diluted coriander.parsley chutney. And this is how may be mine recipe will be sound like. But what make it different from usual chutney and more attractive is this can be a fresh marinade for chicken or fish,but it can also do magic after the grilling process. Yes like yesterday i applied this after my chicken was all ready to serve. I just brushed little of this citrusy freshness and this did not only escalate the flavors but gave a tenderness to the crispy outer, as well as gave herby freshness to the usual grilled chicken.
The recipe that works for me is below but in original version of Chimichuri parsley is used so feel free to substitute mine mint in recipe with parsley.
Chimichuri
prep time : 10 minutes
ready in : 15 minutes
Ingredients:
- 1 dl chopped coriander leaves
- 1 dl chopped mint leaves
- 2 cloves of garlic(medium size)
- 1 tbsp olive extra virgin olive oil
- 1 dl freshly pressed lemon juice
- 1 green chili deseeded and diced
- salt according to taste
- crushed red pepper
- 1/2 tsp dried pomegranate seeds powder
Method:
- In a mixing bowl stir all the ingredients together. ready to go:)
I personally prefer to fix it just at the time of serving.

kindly note in picture i used some extra mint leaves huge :) in size ,but its better to chop coriander and mint as fine as possible.
