Kitchen diaries & Breakfast muffins

Morning Monday! last few weeks of holidays before returning back to routine of sleeping early, waking up early, quick breakfast, rush to school etc. So it's time to get recharge :).  Yesterday was a calm Sunday fixed a quick brunch. Made omelette sandwiches and banana muffins with chilly lassi. Lassi a blend of Turkish yogurt and ice cold water with optional little honey. 
                              




Omelette Sandwiches are  my all time  favorite for breakfast or brunch. To add some sweetness to brunch table baked  banana muffins. I use to bake muffins for breakfast just to  make kids feel extra special. These breakfast muffins are healthy and simplest muffins without compromising on the  flavors:)







Breakfast Banana Muffins

Prep time: 10 minutes
Yield: 10 mini muffins
Ready in: 35 minutes




Ingredients:


    • 2  ripe bananas
    • 2  eggs
    • 2 tbsp  peanut butter
    • 1&1/2  dl  brown sugar
    • 1 tsp cinnamon powder
    • 1 tsp baking powder
    • 1 dl  all purpose flour
    • 1 dl rolled oats
    • 1 dl dark chocolate chips


Method:


    1. Preheat oven to 180 degrees C. Grease muffin pans with little butter, or use paper liners.
    2. In a large mixing bowl mash two bananas. Add peanut butter, sugar and eggs. Mix well with hand or electric mixer.
    3. Add dry ingredients flour, oats, baking powder and cinnamon. Mix for around 1 minute until well combined. With the help of spatula,stir in chocolate chips until evenly distributed.
    4. Bake in preheated oven for 10 to 15 minutes ( for mini muffins ) or until the toothpick inserted in center comes out clean.


 Enjoy soft fragrant banana muffin.
