Happy Friday to everyone:). At my side its lung och ro a Swedish phrase "of in peace" as boys are enjoying new season of Voltron at netflix , so its mama time out :). Fixed a simplest meat veg family meal that is super quick as well. Today i made Beef and zucchini pasta. Hero of this dish was this rich tomato based sauce of minced meat and zucchini. As zucchini season is full on, This is good way to utilize this beautiful summer vegetable. You can substitute shredded zucchini with slices of zucchini even grilled zucchini can be part of this recipe as well. You can make this hidden veg dish to feed non-veg kids get some vitamins as well:). As in this dish zucchini added more richness to sauce and instead of flavor. The recipe i followed is here:
Beef and zucchini pasta

Ingredients:
- 400 gm minced beef
- 1 large zucchini grated
- 1 large onion finely chopped
- 4 cloves of garlic finely grated
- 1 tsp ginger finely grated
- 500 ml vegetable stock
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp crushed chili
- 1 tbsp tomato puree(concentrated)
- 300 gm tomato paste (Can)
- 500 gm penne pasta
- 1 tsp dried oregano
- salt according to taste
- pepper according to taste
Method:
- In a large skillet over medium heat fry onions until soft and translucent.
- Add minced beef and stir fry until brown Add garlic and stir fry for 1-2 minutes.
- Add grated zucchini and stir fry until beef and zucchini are thoroughly fried .
- Add tomatoes puree, ginger , coriander,cumin salt pepper crushed chili and fry for 1-2 minutes.
- Add vegetable stock and tomatoes paste from can. Cover skillet tightly with lid and cook gently for 15-20 minutes.
- Meanwhile sauce is simmering. Cook pasta according to instruction on pack in salted water. Reserve little water from pasta cooking.
- Drain pasta and add to beef-zucchini sauce. stir well until every single penne is coated with sauce.

Its optional to add crushed chili. Luckily my taste buds are fond of most of possible spices in this planet. So keep this mild if you like:)
