BROWN BUTTER APPLE CAKE
Brown Butter Apple Cake:
Time:60 minutes
yield: 8 servings
Ingredients:
- 135gm all purpose flour
- 100 gm butter +1 tbsp for caramelised apples
- 100 gm brown sugar+1tbsp for caramelised apples
- 2 medium-large apples (1 & 1/2 cup peeled and roughly chopped)
- 2 eggs
- 2 tbsp yogurt
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 100 gm sliced almonds
Instructions:
- In a saucepan melt butter over low to medium heat. let it cook. The milk solids will get toasty brown and will smell intensely buttery and nutty. Remove the pan immediately from heat to stop butter from burning and let it cool.
- In a frying pan add a tablespoon of butter add 1 tbsp of brown sugar, ground cinnamon and apples. Let the apple caramelised over low to medium heat and set aside.
- Preheat the oven to 180C. Grease and prepare one round spring form.
- In a large mixing bowl transfer cold yet melted brown butter. Add sugar and mix well, beat in eggs until fluffy. Stir in flour, baking powder and yogurt and mix well. Finally fold in caramelised apples and transfer batter to the prepared tin.
- Sprinkle sliced almonds on top and Bake for 30–35 minutes, or until golden brown on top and the cake has shrunk a little from the sides of the tin. Let it cool and serve!
