HOMEMADE RASPBERRY JAM COOKIES
And Baking keep me going!
After 8 months break found time to write down a recipe. Years ago i chose this medium to write my virtual diary to document my life as a mother and share as well . Last eight months many times thought to return but definitely without peace of mind i Can not reflect.
Mothering 3 little people in these strange times and studying now and then kept me occupied. But today sharing a recipe while staying at home and want to bake some happiness this is what i always comes to .
Some cookies for peace of mind and sweet cravings.....
Homemade Jam Cookies:
Total time: 30 minutes
yields: 16-18 cookies
Ingredients:
- 200 gm butter (softened at room temperature)
- 275 gm all purpose flour
- 1 tsp vanilla sugar
- 100gm of sugar
- 1 tsp baking powder
- 100gm raspberry jam
instructions:
- Preheat the oven to 200 degrees C). Line the baking tray with parchment paper.
- in a medium bowl cream butter and sugar by hand or electric mixer. Add flour, vanilla sugar and baking powder and mix well together.
- Place dough onto a parchment paper. Shape the dough into a long roll and cut into centimetre pieces.
- Shape the dough into small-size balls.
- Make a depression in each cookie and fill it with some jam.
- Bake for 8-10 minutes or until lightly browned around the edges.
- Allow cookies to cool on the baking sheet for 5 minutes then transfer to a wire rack.
cookies are ready to enjoy!
