Flavours of Autumn - 🍂 Apple -Almond Pie

 Summer is not over yet usually we used to have autumn this time of the year.  This year while coping with this heat wave, it doesn’t feel like autumn yet. But i can’t neglect the smell of fully ripe apples:) in the air. When staying home, thinking lot about these strange times and global warming. As a mother i don’t feel quite good about it. But this also pushes me to do, to cherish to celebrate every moment. To treat every second precious. To value what matters. So No worries it’s not autumn yet. Its weekend and i am blessed to have a healthy family around me , i am blessed to have Apples in my Kitchen and i can bake :). So without wasting a second lets bake an apple Pie 🥧 


APPLE-ALMOND PIE:


Total Time: 60 minutes 
makes :8-10 servings 



Ingredients :

For Pie Crust

100gm butter at room temperature (normal salted)

200gm all purpose flour (approx 3&1/2 dl or 350ml *)

5 tbsp caster sugar

2 tbsp cold water

1 egg yolk 

1/2 tsp baking powder 


For Apple Filling:

2-3 medium-large Apples sliced thinly 

25 gm butter 

2 tbsp brown sugar

1 tsp ground cinnamon 


For Almonds Filling:

200 gm almond paste ( Recipe given below)

50 gm butter softened at room temperature 

2 eggs

1 tbsp all purpose flour

pinch of baking powder


Instructions:

1. In a food processor add all ingredients of pie crust and pulse to mix the ingredients completely. wrap dough in a plastic wrap and place in refrigerator for 30 minutes.

2. In a large skillet on medium heat melt butter , add brown sugar and sliced apples. Add cinnamon and sauté until apples are caramelised. Remove from heat and let them cool.


3. In a medium size bowl beat almond paste and butter until smooth. Add eggs, flour and baking powder and mix well.

4. Now to assemble pie start with rolling pie crust. Line a 30 cm or 11-inched  pie dish with bottom crust; trim the edges. Set the rest crust dough aside. Roll it and with different shapes of small cookie cutters make shapes of your choice.

5. Spread almond filling over pie crust. Layer caramelised apples over almond filling. Finish with adding pie crusts different shapes on top.


6. Bake the pie in the lower part of the oven at 200 degrees, about 20 minutes or until pie is golden on top. Cool on a wire rack.


Serve Pie with some whipped cream 





Notes :

For Almonds Paste:

In a food processor mix 1 cup almond flour , 1/2 cup powdered sugar, 1 egg white 1/2 tsp almond extract to make almond paste.


* In Sweden the most commonly used measuring unit(for cooking and baking) in recipes is dl or deciliter. 

1 dl = 100ml

1dl all purpose flour = 60gm

1dl caster sugar = 90gm.
