Chickpea- Veg Butter Curry

Here's a quick sneak peek of autumn cooking in my kitchen. Where i am rustling up a spicy family meal using chickpeas, broccoli, mushrooms and a blend of rich flavors. This one pot curry is so comforting and satisfying. I must say we usually eat quite variety of meals everyday or each week, but there's  few recurrences in our  meal menu each week and this is exactly one of them. It appears again and again and even my eldest son who is not very fond of regular chickpeas curry cant say NO. 
So turn up the heat with this buttery homemade chickpea-veg butter curry. 



Chickpea-Veg Butter Curry

Ready to eat in 25 minutes
Serves 4-6 









Ingredients:



  • 1 tablespoon oil
  • 1 tablespoon butter
  • 2 onions, sliced 
  • 3 cloves of garlic, crushed
  • 1 tablespoon curry powder ( according to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander powder 
  • 1 cup vegetable stock (homemade or ready made from stock cubes)
  • 2 tablespoon tomato-puree
  • 500 g boiled chickpeas
  • 200 g broccoli cut into small florets
  • 200 g mushrooms sliced 
  • Fresh Spinach leaves
  • Salt &pepper according to taste.
  • 1/4 cup of whipping cream or heavy cream


Instructions:

1. Heat the oil and butter in a heavy-based pan, stir in the onion and cook for 4-5 minutes over moderate heat, or until soft. Mix in garlic and spices and cook for 1-2 minutes until fragrant. Stir in chickpeas and tomato-puree and fry for few seconds.

2. Add vegetable stock. Bring to boil, then reduce the heat and add broccoli and simmer for about 5 minutes.

3. Add heavy cream and simmer for 7-8 minutes or until broccoli is just  tender. Season well with salt and ground pepper

4.Meanwhile curry is simmering, warm a heavy-pan over the medium to high heat. Add mushrooms to dry pan, do not overcrowd the pan and let the heat do the magic. Cook until mushrooms are brown and dry.

5. When creamy chickpeas curry is done stir in dry-sauteed mushrooms. Garnish with spinach leaves and serve with naan bread or steamed rice.

This was a super simple midweek  family meal recipe,  but the sky is limit:). You can experiment exactly as you wish. You can add pepper of your choice like me if you can tolerate more spices add 1/4 tsp garam masala. Last but not least use the best quality curry powder as this recipe cant tolerate an ordinary one.
