A Walk Down Memory Lane along cumin cookies




Here i am again to share a quickest recipe of cumin or zeera cookies as i used to call them. This always amazed me, how this savory kind of Spice ignites the flavors of these plain cookies... how salt and sweet combination can do a such a magic together!

Once i read somewhere that "Most of us have fond memories of food from our childhood. Whether it was our mom's homemade lasagna or a memorable chocolate birthday cake, food has a way of transporting us back to the past".

And I remember from my childhood and from childhood, here i am seriously referring to the days before i became mother myself:).  This is one of a flavor that can take me instantly back to those days to the beautiful city of gardens Lahore. 

The city where i was born and raised. We used to had winters like autumns here in Stockholm, and in my university days sitting in a  foggy winter morning in a stair case of a long corridor with insanely high ceilings. I used to sit in the very corner of that corridor and looking towards beautiful flowers with warm cup of tea in my hands was my kind of a relaxing time to start a day . I still remember a packet of these zeera ( cumin) cookies always with me and off-course a pile of books by my side. I had such a bad habit of ditching my morning breakfast then and this is how i used to start my day with warm cup of  tea and cookies.

That was just a  habit then but now it feels very special to my heart. It does happen while passing through present we forget to cherish everything we do, we experience and we own. While going down memory lane these normal everyday little things feel  like a beautiful dream to cherish our soul for the rest of our lives.


It was great feeling to recreate the flavors,i was very fond once. So baking these cookies was exciting plus full of doubts. I ate  the whole first trial's batch just to make sure is it same? 

And finally with little kosher salt i found some most satisfying zeera cookies. If you had some memories with zeera cookies  here is a recipe that worked perfectly for me. and if you never tried cumin in your cookies this variation can be your next baking adventure.




Cumin Cookies

Total time: 20 minutes

yields: 13-16 cookies





Ingredients:



  • 100 gm butter (softened at room temperature)
  • 175 gm all purpose flour
  •  2 pinch of salt
  •  75 gm of sugar
  •  1 egg (egg)
  •  2 teaspoon cumin seeds ( Zeera)





instructions:



  1. Preheat the oven to 375 degrees F (190 degrees C). Line the baking tray with parchment paper.
  2. Put all the ingredients except cumin in a large food processor fitted with the metal blade and pulse a few times to combine well. Add cumin seeds and pulse for few seconds only.
  3. Place dough onto a lightly floured parchment paper or a lightly floured silicone baking mat.
  4. With a lightly floured rolling pin, roll the dough out to about 1/4-inch thickness. Cut into shapes with cookie cutter(s). Re-roll the remaining dough and continue cutting until all dough is used.
  5. Arrange cookies on baking sheet 2 inches apart. Just for aesthetic sprinkle some cumin seeds and kosher salt  on top of every cookie. Bake for 8-10 minutes or until lightly browned around the edges.
  6. Allow cookies to cool on the baking sheet for 5 minutes then transfer to a wire rack.
