Iftar with minute-made Kebabs

Just yesterday this holy month of Ramadan is started, and i am already feeling the velocity of life in these days just increased immensely. nights are shorter and days are even more shorter not incase of fasting  but to do all usual stuff.
I am thinking  a lot now a days to shorter the cooking process of my  meals and spend this time to cherish with my little ones who really have no ideas why mom is too quite:).although the eldest  one do have .

Anyways  yesterday i tried this recipe of kebabs which is blessing in many ways. First its insanely quick and secondly its answer to all my failed grilled plans in the  yesteryear's of my life. yup living in this part of world sometimes left you so disappointed. feel the pain when you are too much looking forward for just a humble weekend grill with family and friends and prediction of rain with dark clouds make you cry inside. so wash your tears and bring on your ovens you can still make it happen without compromising on flavors or texture i guess.

Now directly on  the  point this recipe of kebabs you can customize according to your flavors or taste. moreover like me you can just use a single recipe of kebab you like and recycle it here as well:).

       OVEN-BAKED KEBABS:




Ingredients:


4–6 portions:40 minutes

  • 1⁄2 kg  ground beef.
  • 1   large yellow Onion, sliced
  • 2 tbsp   ginger -and garlic paste
  • 1⁄2 tbsp  chili flakes
  • 1 tbsp   roasted and crushed coriander seeds.
  • 1 tbsp   spice cumin.
  • 1 tsp     garlic pepper
  • 2 tbsp   chopped coriander leaves.
  • 2 tbsp   chopped mint leaves.
  • 1 fresh  green chili.
  • salt  according to taste.
  • 2 tsp   garam masala.
  • 2 tbsp  breadcrumbs..
  • 1 tbsp  tomato-puree.




for garnishing:




  • Red onion,
  • Fresh coriander
  • Sliced green and red bell pepper.
  • feta cheese optional.




instructions:


1. Preheat oven at 225°C, its good to choose grill function. 

2. In a  food processor,add ground beef,onion (chopped),ginger garlic paste,red chili crushed,coriander seeds     (roasted and crushed),garlic pepper crushed,garam masala powder,green coriander,mint leaves,green chili  and salt, chop until all well combined.



3. Brush a nonstick  large baking dish with tomato puree.  



4. Spread the kebab mixture direct from food process on the baking dish and press it down to spread evenly on the dish.



5. Press the vegetables and cheese into this giant  kebab.



6. Bake in the middle of oven for almost  25-30 minutes. and slice with a pizza cutter just before serving.

optional: Give a burning coal smoke for 3-4 minutes not to forget to cover the dish :).


Serve kebabs along the pita bread or rice and complement your meal with raita or any mid- eastern dips.
