Mother who loves to brunch
Hej! hope it was a good day for everyone. personally i had much better day then expected lightly grey sky was enough to make everything alright:). so what came first in my mind while waking up in the morning. lets make a brunch.
between today i was thinking to write little about myself and later about my today's brunch adventure.
I am Rabia living in Stockholm with my husband and three children happily. Eldest son is 8 year middle son is 6 year old and youngest daughter is about to be three soon. I have masters education in statistics.
i started cooking when i got married and came to Sweden. Before that i must say i was in very good hands of a world best chef:) My Mother.....yes a universal best chef "Mother".
And that was the whole point when first i thought to start blog. Now i was in same position from last many years. Now I am mother and my kids are having most important days of their life and i am privilege to nourish them. So apparently i want to document what i do daily the whole process of my creation, experiments and evolution its so joyful and i want to stay this with me.
What inspired me about blogging is individuality we all acquire as being different persons. our exposure our lives our families our roots everything are different stories and depicts in our food too .
Anyhow i forgot to tell i started cooking with help of book my mother gave me while i got married . Later countless Skype calls with her helped me to survive and learn to cook to cherish me and mines.
I hope its enough for today lets get back to grey skies the only inspiration to cook something sweet today:)
here is banana bread with peanut butter Glaze.
Ingredients:
- 2 ripe peeled bananas
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 tsp vanilla sugar
- 1 tsp baking powder
- 1and 1/2 cup all purpose flour
- 3 tsp cinnamon
- pinch of salt
For peanut butter glaze:
- 2 tbsp creamy peanut butter
- 4 tbsp powdered sugar
- 1 tbsp or more milk
- 1 tbsp cream cheese
Method:
- Preheat the oven to (350 degrees Fahrenheit) 175 degrees Celsius and grease a bundt pan with butter and dust with bread crumbs.
- Mash one banana with a fork until smooth.Add melted butter, sugar , brown sugar to banana paste i used machine mixer but hand mixer can be used as well. Add eggs and mix well.
- Mix in flour,baking powder,vanilla sugar and salt.
- Take 8 tbsp of batter in a separate little bowl add cinnamon ans mix well.
- Pour first mixture without cinnamon and add cinnamon one on top to swirl up just like a marble cake.
- Bake in the middle of oven for about 50 minutes or more until tester inserted in center comes out clean.
- Let the bread to cool down for glazing.
- Mix all glaze ingredients until a shiny glaze.
- Pour on cool banana bread Enjoy!
