CARROT HALWA/ DESSERT PUDDING:
Carrot Halwa/pudding is such a divine flavored south Asian dessert. May be little hard work to make it but No pain No gain:).
Presenting Carrot halwa's old and slow-cook recipe. Trust me This slow cooking gives this dessert its traditional flavors and warmth and makes this an ultimate dessert for cosy winter days. So I am recreating this years old recipe of my mother only she used to add "khoya (evaporated milk ) . You can alter this recipe with khoya as well.
Carrot Halwa:
Ingredients:
- Carrots 1 kg
- Milk 1 kg
- Cardamom 4-5
- Butter 125 gm
- Cream 150 ml
- Sweetened Condensed milk 100 ml
- Dry milk powder 100 gm
- Sugar -according to taste
(Boiled eggs and nuts to garnish)
Method:
1. Wash and peel carrots.Grate carrots with the help of hand- held grater or in food processor.
2. In a heavy bottom pot boil grated carrots and milk together over medium-low heat ,until carrots are tender.
3.Cook this mixture until milk is evaporated and solidify like khoya particles while stirring repeatedly.
4. In a heavy wok heat butter add cardamom pods and fry for few seconds. Add carrot-milk mixture
and stir fry for few minutes.
5. Add Sugar , condensed milk and cream and stir well until sugar is absorbed by halwa and leave a gooey texture to it.
7. in the end add dry milk powder and stir fry your halwa until halwa release little butter .
8. Delicious halwa is ready to warm you up:).
