FRIDAY BAKE
Hello! its Friday plus a sunny one. Literally start of weekend can never be better than this:). Practically with just 3 to 4 hours of day light all you want something bright and sweet. So today it feels indispensable to share or document the recipe,i recently really enjoyed in my kitchen.
Lussebullemuffin
(SAFFRON MUFFINS):Prep time: 10 minutes
Yield: 12 muffins
Ready in: 35 minutes
Ingredients:
- 100g softened butter at room temperature
- 2 free range eggs
- 150g caster sugar
- 180g plain flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 100 ml natural yogurt
- 2 tbsp milk (luke warm to dissolve saffron)
- 1/2 tsp (or 0.5g) saffron
- 1/4 tsp salt
- 100g raisins
- Swedish Pearl sugar to sprinkle before baking.
Instructions :
- Heat oven to 200°C and line a 12-hole muffin tin with muffin liners.
- Cream the butter and caster sugar together until fluffy. Add the eggs and beat in for 1 min, then mix in the yogurt,and milk with saffron. Combine the flour, baking powder and baking soda in a bowl with salt.
- Stir in dry ingredients into the wet ingredients. Finally, fold in the raisins divide the mixture between the muffin cases. sprinkle Swedish pearl sugar on the top of each muffin.
- Bake for 15-18 mins more until risen and golden.
