Friday Bake

Happy Friday! after months i am all back on track. :).i was all lost first in exploring little world around us with family. Later took plunge  into a  theory of likelihood :) literally  two months passed away in a blink of an eye. I Would love to share the story of both beautiful experiences soon as being a mother of three both were the first times. Now for today its all about baking, feeling like from summer kind of baking i am crash landed to some wintertime's baking stuff. But this is not the case even in most busy times what kept me refreshed was definitely baking. Here is one recipe i tried yesterday to bake some saffron biscotti . Biscotti are perfect long lasting treats with the texture of rusk. perfect to dip in your coffee or tea and for kids i love to serve them along warm milk. i like to add grounded almonds to soften texture.  Here is my first saffron bake of 2018  and many to come:).

Saffron biscotti:

yields: 28 to 30 biscotti

ingredients:

150 grams sugar
200 grams  all purpose flour
100 gram almonds and pistachios
1 large egg
1 tsp baking powder
0.25 gm saffron (1/4 tsp ground saffron)
1 tbsp warm milk.

Instructions:

1. Preheat the oven to 375 degrees F (190 degrees C).  Line  the baking tray with parchment paper.

2. In a small bowl combine saffron and 1 tbsp hot milk. Let saffron steep in hot milk and ready to use.

3. In a medium mixing bowl beat eggs and sugar together. Add almond and pistachios in mixture. Sift in flour baking powder and add saffron milk mixture to form  a thick dough.

4. Make a long roll of dough press little down and bake in oven for about 20 minutes.

5. Let the biscotti roll cool later slice roll into  approximately  1/2 inch slices. Place the slices onto the baking sheet. place the baking tray back into switched off  but warm oven and until crisp and become rusk like in texture.
